Chicken Rockefeller

Ingredients:

  • 1 – 10 oz package frozen chopped spinach
  • 1 egg, beaten
  • ¼ cup grated Parmesan cheese
  • ½ cup Italian style bread crumbs
  • 3 boneless, skinless chicken breasts
  • Salt and pepper
  • 3 Tbsp olive oil

Method:

Cook spinach according to package instructions; drain and cool.  Combine spinach, egg, and 1 tbsp Parmesan cheese.  Combine remaining Parmesan and bread crumbs in shallow dish.  Season chicken with salt and pepper; roll in bread crumbs mixture.  Place in greased shallow 2 qt. baking dish.  Mound spinach on each breast; sprinkle with remaining bread crumb mixture and drizzle with olive oil.  Bake at 350° for 40 minutes.
