Baldwin’s Key Lime Pie

Ingredients:

  • whipped cream, for serving

Pie Crust: 

  • 1 1/2 cups graham cracker crumbs
  • 3 Tbsp sugar
  • 6 Tbsp butter, melted
  • 1 cup pecans, finely chopped

Pie Filling: 

  • 10 egg yolks
  • 2 14oz cans sweetened condensed milk
  • 1 1/4 cups key lime juice (like Rose’s sweetened bottled key lime juice)
  • 1 tsp grated lime zest
  • (optional) 1 small container sour cream, if you want a richer pie

Method:

Preheat oven to 325 deg. F.

Make the crust by mixing together all crust ingredients and pressing them into the bottom and sides of a 10″ pie dish. Bake for 10 minutes and then allow to cool.

To make filling, whisk together egg yolks and sweetened condensed milk until smooth. Add sour cream if using . *Sloooooowly* add lime juice and whisk until smooth. Add zest and whisk to incorporate.

Pour mixture into pie shell and bake for 20 minutes. Allow to cool to room temperature and then refrigerate for a minimum of 5 hours.

Garnish with whipped cream and more zest or lime slices, if desired.
