Best Ever Turkey Meatloaf

Adapted from this recipe.

Serves 6

Ingredients:

  • 8 ounces mushrooms
  • 1/2 onion, peeled and roughly chopped
  • 8 ounces carrots, peeled and roughly chopped
  • 2 garlic cloves, peeled and minced
  • 1 tablespoon oil
  • 3/4 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Worcestershire sauce
  • 7 tablespoons ketchup, divided
  • 1 cup (60 grams) panko bread crumbs
  • 1/3 cup (80 ml) milk
  • 2 large eggs, lightly beaten
  • 1 Tablespoon white miso (or substitute 2 Tablespoons grated Parmesan)
  • 1 ¼ pound ground turkey (92% lean)

Method:

Heat oven to 400° Fahrenheit. Lightly oil a rimmed baking sheet (or use a 9-inch by 9-inch baking pan).

Add the mushrooms to a food processor and pulse until finely chopped. Transfer to a large bowl. Repeat with the onion and then the carrot.

Heat oil in a large skillet over medium heat. Add the vegetables and cook, stirring occasionally, until softened; about 10 minutes. Add the garlic, a 1/2-teaspoon of salt, and a 1/4-teaspoon of pepper and cook until fragrant, about 1 minute. Cook until the vegetable liquid boils away; about 10 minutes more, turning down the heat towards the end, if needed.

Transfer the vegetable mixture to a large bowl, and then stir in the Worcestershire sauce and three tablespoons of the ketchup. Set aside to cool for 5 minutes. Add the breadcrumbs, milk, and eggs to the mixture. Add the miso or Parmesan. Using a fork or your hands, gently mix in the turkey until everything is thoroughly combined. The mixture will be very wet.

Form the meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining four tablespoons of ketchup on top.

Bake the meatloaf until an instant-read thermometer inserted into the thickest part of the meatloaf registers 170 degrees F, about 40 minutes. Let stand 5 minutes before slicing.

Note: Some stores sell ground turkey in 1-pound portions and others in 1 ¼-pound portions. While we like using 1 ¼-pounds of turkey, 1 pound of turkey is adequate for the ingredient amounts shared in the recipe.
